Savoring Summer

How can it already be August? It truly feels like the summers go by faster and faster every year! Fourth of July has come and gone, lake weekends are in the rearview mirror, and it is almost time to put the kids back on the bus again. With summer slipping away so quickly, we had to ask ourselves, "How can we savor every last drop of time with our loved ones? How can we bless our family, friends, or neighbors with one last summer hoorah?" Our solution: throw one last spectacular summer dinner party!



#1 - Where to Cook?

The summer heat is on, and no one wants to warm up the oven to cook. The best solution: move your meal outside! Taking your dinner preparation outdoors will provide all the summer vibes you and your guest are looking for. Whether you have an elaborate outdoor kitchen or just an old grill on the patio, this can make for the perfect outdoor gathering place. Spicing up your backyard can be as easy as setting a folding table with a funky tablecloth and a few homemade centerpieces. Taking a few moments to decorate your space will make your guests feel extra special and give you an added feeling of accomplishment.


#2 - What to Cook?

When deciding on a menu, the sky is truly the limit! However, in keeping with our backyard extravaganza theme - we suggest grilling. Instead of burgers and brats, try spicing up the menu with fresh grilled veggies and one of our summertime favorites: Grilled Pineapple Chicken Kebabs.

Ingredients:


● 4 lbs. boneless skinless chicken thighs

● 1 pineapple

● 1 cup pineapple juice

● ½ cup soy sauce

● 6 cloves of pressed Garlic

● 1 yellow onion thinly sliced

● 2 tbsp white wine vinegar

● 2 tbsp brown sugar

● cooking spray



Directions:

- Combine pineapple juice, soy sauce, vinegar, garlic, onion, and brown sugar.

- Cut chicken thighs in half and place into a large zip-to bag.


- Add marinade to the same bag, and place the chicken into the refrigerator to marinate

overnight (or for at least 4 hours).

- When chicken is done marinading, skewer chicken pieces and pineapple chucks (roughly

one-inch cubes) alternating at your preference. It may be easiest to fold the thigh in half

when skewering.

- Spray each kebab with cooking spray and place it on the grill. Grill, rotating kebabs

around until chicken has reached 165 degrees internally (usually 4-5 minutes on each

side).

Pro-Tip: Simmer the remaining chicken marinade on the grill in a metal sauce pot and

brush the kebabs while grilling.
